No matter what kind of grill you have, you can always make a flavorful dish that conjures up the taste of summer. While most people think the barbecue is for barbecued meats, you can make great vegetable side dishes on the grill as well. Try putting some asparagus on the grill and getting those trademark grill lines on your veggies too. Add some fresh herbs like oregano or rosemary with the asparagus to add some flavor to the dish. Asparagus has many health benefits and is rich in iron, zinc, vitamin A and dietary fiber. Because grilling is one of the healthier ways to cook – opposed to sautéing or pan frying in fats – this dish is exceptionally healthy. Grilled Asparagus Recipe
2 bunches of jumbo asparagus, if available, washed and dried
Cleaned, hot grill, lightly oiled
4-5 sprigs of oregano
1-2 Tbsp EV olive oil
1-2 Tbsp. balsamic vinegar
1/2 tsp. sea salt
3-4 grinds of black pepper
1. Lightly oil a hot grill, usually medium heat is fine
2. Arrange spears horizontally and cover for 2 minutes
3.Turn spears over and continue grilling until slightly soft, adding oregano to scent the spears
4.Remove to platter and add the seasonings and spices
5. Serve hot
