How To Make Cake Pops

You can make a simple yellow sponge cake beforehand – no need to be fancy, you can use a boxed mix. Once the cake is cooled, you will need to crumble it in a stand mixer and add some butter cream to bind the cake. Use an ice cream scoop to get consistent sizes of balls and roll them after they have firmed enough to hold their shape. Chill the cake balls in the refrigerator for about two hours so they set up. Once the cake balls are ready, stick them with a skewer and coat them with melted chocolate. You can use any kind of non-tempering chocolate then cover them in sprinkles for a festive look. Cake Pops Recipe:

Ingredients:
1 box of yellow or chocolate cake mix pre-pared, baked and then crumbled up
8 oz butter cream icing
Lollipop sticks
White almond bark for dipping
Milk chocolate almond bark for dipping
Variety of sprinkles, candies and nuts for decorating

Directions:
1. Mix the cake crumbs and butter cream icing until smooth and scoop into small balls and refrigerate for about 2 hours until set. Roll the balls until smooth and place on a lined baking tray and push a lollipop stick into the top and refrigerate for about an hour until set again.
2. Melt the almond barks over a double boiler.
3. Carefully dip the pops in the melted almond bark covering about ¼ inch of the stick letting the excess drip off and carefully wiping it on the side of the bowl. Cover with sprinkles, candies or nuts while still wet and place round side up in a glass to dry or dip the top in sprinkles, candies or nuts and leave to dry. For the eye cake pop cut a mini marshmallow and put it on the cake pop when still wet and pipe a little chocolate for the center.
