Eggs Over Easy Recipe

Ingredients
2 Fresh Eggs
Softened butter
8 inch non Non-stick pan
Salt and pepper

Procedure
1. Allow eggs to sit in room temp for about an hour
2. Crack eggs onto a flat surface then lower into small bowl
3. Heat skillet over low heat add softened butter do not allow it to get too hot.
4. Lower eggs from center of pan and allow to set slowly
5. When slight browning is evident around edges and eggs are not sticking, and ensuring there is enough butter around egg. Swirl eggs and with the eggs lower to the side facing away from you. Flip over with wrist action as demonstrated.
6. Allow to set 10 seconds and then slide onto plate.
7. Use paper towel to blot any excess butter
8. Season with salt and pepper as desired.

Scrambled Eggs Recipe

Ingredients
2-3 Fresh Eggs
Softened butter
8 inch non Non-stick pan
Salt and pepper

Procedure
1. Allow eggs to sit in room temp for about an hour
2. Crack eggs into bowl add ¼ tsp. milk or cream or water, whisk as demonstrated until a steady stream is evident. Be sure the whites are not visible.
3. Heat skillet over medium heat add softened butter do not allow it to get too hot.
4. Add eggs and scramble with dinner fork, be sure to move the eggs vigorously at first. Pulling egg from the sides to the center.
5. Keep the curds small through regular scrambling don’t let it set in the pan or get dry !
6. Remove them from the heat when just some liquidy eggs remains and is visible on top then drop onto plate and stir as well, before serving.

Omelette Recipe

Ingredients
3 Fresh Eggs
Softened butter
8 inch non Non-stick pan
Salt and pepper

Procedure
1.Allow eggs to sit in room temp for about an hour
2.Crack eggs into bowl add ¼ tsp. milk or cream or water, whisk as demonstrated until a steady stream is evident. Be sure the whites are not visible.
3.Heat skillet over medium heat add softened butter do not allow it to get too hot.
4.Add eggs and scramble with dinner fork, be sure to move the eggs vigorously at first. Pull eggs from the sides to the center but keep the curds small through regular scrambling. Then finally allow to cook and set.
5.When ready to roll the omelet. Lift pan up and tilt away from you and tap handle with other hand to move omelet up to the rolled edge. With this tapping then allow it to fold over into 1/3rd
6.Then with your spatula fold the other third over and then with reverse grabbing the handle, invert the pan onto a plate.
7.Form into oval shape with clean towel.

Hard Boiled Eggs Recipe

3-4 Fresh Eggs
Cold water enough to cover the eggs
1 tsp salt.

Procedure
1. Allow eggs to sit in room temp for about an hour
2. Lower eggs careful into empty pot
3. Add cold water and salt.
4. Bring to a boil, then cover and remove from heat
5. Allow to sit for 15-18 minutes
6. Immediately add ice to the water and allow to cool, until you can handle the egg.
7. Peel under running water from large or air sac side.
8. Hard boiled peeled eggs are best stored in salted water to retain texture
9. Or store in shell and use as desired.
