How To Cook Onions And Onion Soup

Onions are multipurpose ingredients that lend a robust flavor to a variety of dishes. Both the onion bulb and the sprouts, known as scallions or green onions, can be consumed for a healthy source of antioxidants and vitamin C no matter what the variety. There are countless ways to prepare onions and their distinct flavor is utilized worldwide. While onions often serve a supporting role in many dishes, a classic onion soup is a great introduction to using onions as a main ingredient. Use a sharp knife to slice the onions for your soup and work quickly to minimize the amount of fumes that make your eyes water. Onion Soup Recipe

Ingredients:
1 lb. yellow onion, julienned
1/3 tsp garlic, crushed
20 oz beef stock
20 oz chicken stock
1 oz olive oil
2 oz butter
¼ cup of sherry
sea salt
freshly ground black pepper

Method:
1. Saute the onions in oil and butter until the onions are caramelized.
2. Deglaze sauce pan with a little of the stock or red wine, then add remaining stock and simmer 20-30 minutes.
3. Adjust the flavor with salt and pepper.

Onions Recipe, Caramelized and Sautéed

Ingredients:
1-2 lb. yellow onions (divide in half for both preparations)
2-3 oz. sweet butter as needed
1-2 oz. EV olive oil as needed
½ cup vegetable stock
1 tbsp balsamico vinegre autentico de modena

Method for Caramelized Onions:
1. Slice onion into julienne, pre-heat heavy duty skillet, when all onions are cut, add 1-2 Tbsp olive oil allow to heat then add 1-2 Tbsp. butter.
2. Cook onions on low heat until they very slowly start to brown, when caramel colored add balsamico to assist in the browning process. Stir to combine and allow to cool.Keep refrigerated.
This item is ideal for a salad garnish or for other meat or veg dishes.

Method for Smothered Onions:
1. Slice onions either into rings or julienne, depending on desired presentation.
2. Pre-heat skillet, add olive oil, when heated add butter, when hot add onions and sauté and allow to brown until desired color is achieved.
This item used for burgers and steak.
