Strawberry Rhubarb Lemonade Recipe
Serves 6

Ingredients:
3 ½ cups water
½ lbs. rhubarb, trimmed and cut into 1-inch pieces (about 2 cups)
¾ cup granulated sugar, or to taste
2, 3-inch strips of lemon zest removed with vegetable peeler plus additional for garnish
2 cups strawberries, sliced
1 cup freshly squeezed lemon juice

Method:
1. In a saucepan, combine water, rhubarb, sugar, 2 strips of zest and 1 cup strawberries.
2. Bring the mixture to a boil, stirring until the sugar is dissolved. Reduce to a simmer, cover and cook for about 8 minutes.
3. Remove from heat and let cool. Strain mixture through a coarse sieve set over a pitcher. Press on the solids to squeeze out as much liquid as possible.
4. Toss lemon juice to the remaining 1 cup of strawberries. Divide strawberries among six stemmed glasses filled with ice cubes.
5. Divide strawberry rhubarb liquid between each glass. Garnish with additional zest before serving.
