How To Make Chickpea Salad Wraps

Eating healthy now a days has become a challenge for many, because it is a lot easier to just go straight to a fast food restaurant. In the video below Chef Thomas will show us how to prepare a light and healthy Chickpea Salad Wrap that you can prepare the night before or on the go. You will need canned chickpeas, chopped celery, cut pickles, chopped red onions, fresh minced garlic, toasted sunflower seeds, mustard, lemon juice, fresh or dry dill, and flour tortillas. In a bowl, place in the chickpeas and smash a couple to get more of a pasty substance so that the wrap will hold together. Following that you will add in the rest of the ingredients. If you are looking for a spicier taste you can always add in some jalapeños.  Grab any type of tortilla you like, we will be using a flour tortilla. Get some of the salad from the bowl, put on the tortilla and roll it to finish. You can enjoy it now or have it later. Chickpea Salad Wrap Recipe:
Yield: 3 servings

Ingredients:
1 (15-oz) can chickpeas
1/2 cup small diced celery
2 tbsp brunoise red onion
1 each brunoise dill pickle
1 tbsp minced fresh dill
1 garlic clove, minced
1/2 tsp stone ground mustard
2 tbsp fresh lemon juice
1/4 cup toasted shelled sunflower seeds
salt and pepper, to taste

Directions:
1. Toast the sunflower seeds in sauté pan.
2. Mix everything into a bowl, mashing up the chickpeas slightly with a fork, and season with salt and pepper, to taste. Stuff into a wrap or pita, or enjoy with crackers or rice cakes.
