How To Cook Cabbage

Red Cabbage Recipe

Ingredients
1/2 head of red cabbage
1/4-1/2 cup veg stock
2 Tbsp raisins or sultanas
1 Tbsp Apple cider vinegar
1 Honey crisp apple med diced
2 Garlic cloves, chopped
1 med. Onion small diced
2 Tbsp Olive oil
Sea Salt
Black pepper

Procedure
1. Cut cabbage in half and remove core, cut in half again and shred with chefs knife.
2. Dice onion and chop garlic
3. Sweat onion and garlic in oil, and add cabbage sauté med heat, add stock and vinegar and cover to braise slowly on low simmer.
4. Stir occasionally. Keep cover on.
5. When softened add apples, season to taste. Add more stock if desired for softer texture.
6. Toss with raisins and serve. 

Sauteed Green Cabbage with Tomato and Garlic Recipe

Ingredients
1/2 head of green cabbage
4- 6 oz. of tomato sauce
2 Garlic cloves, chopped
1 med. Onion small diced
2 Tbsp. Olive oil
Sea Salt
Black pepper

Procedure
1. Cut cabbage in half and remove core, cut in half again and shred with chef’s knife.
2. Dice onion and chop garlic
3. Sweat onion and garlic in oil, and add cabbage sauté med heat, some color development is fine.
4. Add sauce and simmer until tender.
5. Season to taste. Add more sauce if desired for softer texture.
