Grilled Fresh Asparagus With Warm Tomato Vinaigrette Recipe
Serves: 6
Ingredients:
1 lb.fresh asparagus
½ cup olive oil
¼ cup shallots, minced
1 cup tomatoes, peeled, seeded and diced
¼ cup red wine vinegar
1 clove garlic, minced
2/3 cup dry white wine
Salt
Freshly ground black pepper
1 to 2 Tbs. capers
Method:
1. Trim the woody ends off the asparagus and brush with ¼ cup of olive oil.
2. Heat the rest of the olive oil in a saucepan over medium high heat and add shallots. Turn the heat to low and cook until wilted, about 5 minutes. Do not brown.
3. Add ½ cup tomatoes and simmer 3 to 5 minutes. Add vinegar, garlic, wine, salt and pepper. Simmer another 15 to 20 minutes until reduced to a thick sauce.
4. Season to taste and stir in fresh tomatoes and capers.
5. Grill asparagus until tender. Serve immediately with 1-2 tsp. of vinaigrette drizzled over the top.
