How to Make Pasta Dough

When it comes to pasta, you’d think that most of the flavor comes from the sauce, stuffing ingredients or toppings. But, as any Italian would tell you, the dough is one of the most important parts of the entire puzzle that is your meal. For instance, think of the dough as the bread of a delicious, awesome Italian sandwich. It can make or break everything that should be good and delicious and amazing about your meal. It also takes a total of 3 ingredients to create the entire thing. And although it may need a little bit more physical exertion than opening a box and pouring it into some water, you can just think of it as your weekly bicep workout! Just mix, knead and rest and you have some amazing stuff to work with a make into tortellinis, raviolis or some fresh, homemade string pasta.

Ingredients:
4 Eggs
2 oz Olive oil
3/4 tsp Salt
14+ oz AP Flour
2 oz Semolina Flour
2 oz White Wine

Directions:
1. Combine flour, semolina and salt. Make a well on table.
2. Add eggs, olive oil and wine in center of well.
3. With a fork, whisk egg mixture and begin incorporating flour while whisking. Knead to combine to make a smooth dough.Add flour if needed. Press finger into dough it should bounce back.
4. Wrap the dough in plastic wrap and set it aside at room temperature for 20-30 min to rest.
5. Only use a small portion of dough at a time, keeping the remainder covered to prevent it from drying out.
