To speed up the process you can use canned red beans rather than preparing dried beans. If you choose to use canned beans, warm the beans in a small pan with the liquid they are canned in and a few bay leaves. This Cajun-inspired dish calls for the use of the “trinity,” which is diced onions, celery and bell peppers. Sweat these three ingredients in oil and then add minced garlic, bay leaves and thyme for flavor. Combine the beans into the pan that the trinity is in and then add raw rice and water to the mixture. Allowing the rice to cook with the rest of the ingredients will help the flavors to combine seamlessly. Red Beans and Rice Recipe:

Ingredients:
1 cup of onion small diced
1 cup of celery small diced
1 cup of green peppers small diced
4 cups of overnight soaked and cooked red beans
2 small Bay leave
1 Tbsp Dried thyme
1 cup pulled pork
2cups of cooked rice

Directions:
1. Sautee, celery, garlic, onion, peppers, until translucent and cooked.
2. Later add pulled pork, dried thyme and beans let cook.
3. Add the cooked rice.
4. Put in service bowl.
