Pickled Beets

Ingredients:
1 lb. beets
½ cup vinegar
¼ cup sugar
1 tsp. caraway seeds
¼ tsp. salt

Method:
1. Cut off all but 1 inch of the beet tops. Wash but do not skin or remove the roots at this time. This will keep them from bleeding and loosing flavor.
2. Place beets into enough boiling water to cover. Cook uncovered for 30 minutes to 1 hour depending on the age of the beets.
3. Cool the beets slightly then peel them. The skins come off easily when still warm. Slice or dice the beets.
4. Boil the vinegar and sugar for 5 minutes, and then add caraway seeds and salt. Pour over the sliced or diced beets. Serve cold or room temperature.
