Collard Greens Recipe:Ingredients
2 bunches of Collard greens
½ jalapeno pepper
¼ tsp black pepper
2 whole cloves of garlic
½ onion, sliced
1 smoked ham hock
1qt water

Procedure
1. Place water, ham hock in pot and then bring to boil, when ham hock is tender remove meat, cut up and reserve for garnish
2. Add pepper, garlic and jalapeno to stock,
3. Wash and derib greens, cutting up stems and roughly chopping greens themselves.
4. Add onion, then green stems first and simmer then add green tops, and cook covered until desired tenderness.
5. Add more pepper if desired and adjust salt.
