How To Make Beignets

Want to get a feel for the French Quarter without the crowded streets, boisterous partiers and sweltering summer heat? You can make the finger-licking-good beignets in the comfort of your own home – and air conditioning. These tasty little fritters are found everywhere in New Orleans and for good reason; they are unbelievably delicious. Although they are often served as a sweet dessert, they can be made with meat and vegetables as a savory dish. Beignets are made from a deep-fried choux paste, which is dough made from yeast, flour, sugar, evaporated milk and shortening. This French dish has been declared the official state donut of Lousiana. Beignets Recipe

Ingredients:
1 envelope active dry yeast
1 1/2 cups warm water
1/2 cup granulated sugar
1 teaspoon salt
2 eggs
1 cup evaporated milk
2 teaspoon vanilla
7 cups all-purpose flour
2 tablespoons shortening
2 tablespoon butter
Vegetable oil for deep-frying
3 cups confectioners sugar

Method:
1. Mix yeast and water in a large bowl
2. Add sugar, eggs, evaporated milk and salt and blend well. Mix in 1/2 of the flour, then the shortening, then the rest of the flour. Cover and refrigerate overnight
3. Roll dough to 1/4 inch thick and cut into 1 ½ inch squares
4. Place in oil (being careful not to splash the oil) and fry in 360 degree oil until golden brown
5. Drain for a few seconds on paper towels and then toss in a bag of confectioners sugar
