Many people say that a great cut of meat doesn’t require any seasoning, but using the right ingredients can actually bring out the natural flavor of the meat while adding new dimensions to it. Pepper crust rub
Perfect for a New York strip steak, this recipe accentuates the natural flavor of your steak and adds a tone of heat that spice fans are sure to appreciate. The preparation is very simple. You’ll need to grind up a fair amount of fresh pepper, applying it evenly to both sides of the cut and firmly pressing it into the meat. After this, you’ll need to add lime pepper and salt in the same manner. Store the cuts in the fridge, uncovered, for three hours to allow the crust to set. To cook the meat, start by grilling on high heat for three minutes on each side, then cook to your liking.
Lime cumin marinade
This marinade offers a zesty take on a thinner cut of meat, perfect for flank or strip steaks. In order to prepare the marinade, combine the following ingredients in a large zip-top plastic bag or container: ⅓ cup vegetable oil, ¼ cup water, 2 cloves minced garlic, 1 tablespoon cumin, 1 tablespoon chili powder, ½ tablespoon onion powder, ½ tablespoon sea salt, 2 teaspoons chili powder, 2 teaspoons oregano, 2 teaspoons Worcestershire sauce and 1 teaspoon black pepper. Trim the excess fat from the steaks and put them in the container to marinade, leaving them refrigerated for two to four hours. While grilling, spray heavily with lime. Cook to desired doneness.
Basil oregano wet rub
Requiring very little prep time and delivering a bold flavor, this wet rub is perfect for thicker steaks such as t-bones. To make this rub, combine the following ingredients in a large container or mixing bowl: ¼ cup olive oil, ⅓ cub chopped oregano, 4-5 chopped basil leaves, 1 tablespoon cider vinegar, 1 tablespoon sea salt, 1 teaspoon onion powder, ½ teaspoon garlic powder and ½ teaspoon black pepper. Once combined and mixed evenly, coat the steaks in the marinade and grill to your liking. Drizzle extra marinade over the cuts of meat during grilling to ensure flavor.
