Stir Fried Chicken Recipe
Yield: 4 servings

Ingredients
1 ½ pounds chicken breast, skinless and large dice
1 tablespoon vegetable oil
1 tablespoon sesame seed oil
½ bunch broccoli, florets
2 ounces shitake mushrooms
1 ounce carrots, julienne
1 ounce onion, small dice
1 ounce celery, small dice
¼ cup sugar snap peas
½ teaspoon garlic, minced
½ of pepper red bell pepper, medium dice
4 ounces water chestnuts, can, drained and sliced
½ cup chicken broth
½ tablespoon soy sauce
1 ounce hoisin sauce
¼ teaspoon ginger, powdered
1 tablespoon cornstarch
½ teaspoon kosher salt
¼ teaspoon black pepper

Procedure
1. Rinse the chicken breast with water and trim any excess fat, cut into large dices and pat dry with paper towels.
2. In a stainless steel bowl mix chicken broth, hoisin sauce, soy sauce, ginger, and cornstarch to make a slurry and reserve.
3. In a wok/large skillet/ sauté pan, heat the vegetable oil and sesame seed oil to a medium/high heat.
4. Add the cubed chicken and sauté for 4-5 minutes or until lightly brown.
5. Add the vegetables (broccoli florets, shitake mushrooms, carrots, onions, garlic, and red bell peppers) and stir fry for 4-5 minutes. Add water chestnuts and stir fry for another 2 minutes.
6. Add the slurry and reduce for 3-4 minutes until sauce is thickened.
7. Adjust the seasoning and serve on a warm plate.

This recipe serves well over rice noodles.
