Grouper Recipe

Ingredients
8 oz portion of grouper fillet
1 tsp.sea salt
¼ tsp.red pepper
1 tsp minced fresh ginger
1 clove garlic minced
½ scallion cut on a bias
½ tsp Thai red curry paste mixed with
1-2 Tbsp. coconut milk
1-2 leaves Thai or regular basil
1 tsp Tamarind paste (optional)

Method
Preheat oven to 375o F
1. Cut a piece of foil into 15 by 24-inch sheet. Fold in 1/2 and lay on a baking/cookie sheet. Cut into tear drop shape to make a heart, and then open to shape a heart as you see in the demo. Fold heart in half and then re-open.
2. Brush foil with coconut oil (or butter). Place stick-cut carrot and celery on bottom half of foil. Lay fish on top.
3. Salt and pepper fillet. Squeeze juice from ½ lime over all. Place basil leaves on top. Pour 1 T coconut milk/curry paste mixture over fish and add minced ginger and garlic.
4. Fold over edges of foil to from package, starting with the top of the ‘heart’ to create an airtight seal. Bake in oven for 25 minutes.
5. Serve and open in front of guest
