Fried Fish Recipe

Ingredients:
8-12 oz sole, flounder, or catfish fillets
1 tsp.sea salt
¼ tsp.freshly ground black pepper
4 oz all purpose Flour
6 eggs beaten with 1 oz. of milk
8 oz. panko bread crumbs
1 tony caceres cajun seasoning or old bay

Method:
Preheat oil to 350 degrees F using candy thermometer
1. Wash fish and pat dry with towels
2. Season fish and dredge in flour
3. Dip into beaten egg mixture and then bread with crumbs
4. Heat oil to 375 degrees F and add fish when oil is hot
5. Cook until golden brown on all sides
6. Drain on paper towels
7. Serve with sauce of choice
