Cold Soba Noodles with Spicy Sichuan Sauce Recipe
Serves 6

Ingredients:
5 Tbs. soy sauce
2-3 Tbs. hot chili oil or to taste
1 Tbs. sugar
1 ½ Tbs. rice vinegar
1 tsp. ground Sichuan peppercorns
2 Tbs. water
1 tsp. salt
½ tsp. fresh ginger, minced
½ tsp. white sesame seeds
1 Tbs. minced garlic cloves
1 Tbs. chopped scallions
1 Tbs. chopped cilantro
1 lb. buckwheat soba noodles
1 Tbs. sesame oil
2-3 lbs. chicken, cooked, cooled and shredded
1 each cucumber, cut into strips
1 cup mung bean sprouts
1 each carrot, peeled and julienned

Method:
1. Mix the first 12 ingredients in a bowl and set aside
2. Cook the soba noodles until just al dente then rinse under cold water until cool. Mix with 1 Tbs. of sesame oil
3. Portion the noodles between 6 plates and place some cucumber, bean sprouts, carrots and chicken on top
4. Toss noodles with the sauce and enjoy!
