Green Beans with Olive Sauce
Yield: 8 servings

Ingredients:

3 lb. green beans, trimmed
¼ cup olive oil
½ red onion, small dice
2 Tbs. pine nuts
2 clvs garlic, thinly sliced
1 Tbs. parsley, finely chopped
1 Tbs. basil, thyme and oregano, minced
½ lb. olives, pitted and chopped
4 sun-dried tomatoes, chopped
½ cup red wine
2 tsp. red wine vinegar

Salt and freshly ground black pepper
Method:

Blanch green beans in salted boiling water until al dente and shock in ice water bath.

Warm the olive oil in a sauté pan over medium low heat and add the onion, cooking until just soft.

Add the garlic and pine nuts and cook an additional two minutes.

Add the olives, tomatoes and wine. Simmer slowly for 5 – 6 minutes.

Add red wine vinegar and let simmer for another minute or two.

Add cooked green beans and herbs, toss to coat. Season to taste with salt and pepper.
