Sweet Potato or Pumpkin Pie Recipe

Sweet Potato or Pumpkin Pie

Yield = one 9” pie

Ingredients:

3 each      eggs
2 cups      cooked sweet potato, pumpkin, yam, or combination
¾ cup       sugar
½ cup       cultured cream
½ cup       buttermilk
¼ tsp        salt
1 tsp         cinnamon
¼ tsp        ginger
¼ tsp        nutmeg
1/8 tsp      cloves
1 recipe    Pâte Brisée Fine

Method:

  1. Combine all ingredients and mix well.
  2. Place in a pre-baked piecrust (baked until light brown).
  3. Bake at 425° for 10 minutes then lower the heat to 375° and bake until just set in the middle.

    What is Pate Brisee Fine?

      The best definition I can find is:

      “You may also see pate brisee referred to as “pate brisee fine.” In French, “pate brisee” literally means “short dough,” a reference to the fact that it contains a very high ratio of fat to flour. It is this ratio which gives pate brisee its unique properties, turning it crumbly, flaky, and incredibly rich. This ratio also makes pate brisee easy to work with, because it makes this dough more forgiving than other pie and tart doughs.”
