Delicious homemade pesto

-1 pinch of salt

-3 cloves of garlic
-1/2 cup of olive oil, extra virgin
-1/6 cup of pine nuts
-1/6 cup of chopped walnuts

Instructions:

1) Mince or finely chop three cloves of garlic into evenly-sized, small pieces that the food processor can easily blend.

2)Take the chopped walnuts and pine nuts and place them in the container of your food processor along with the basil leaves.

3) Pulse the food processor several times to blend the nuts and the basil together evenly. Each pulse should take roughly five seconds and you should be left with a viscous paste.

4) Add the parmesan or Romano cheese to the mix. For a more contrasted flavor, you may want to add equal parts of both cheeses.

5) Pulse the food processor in short bursts again so as to evenly blend the cheese into the existing mixture of basil and nuts. It should maintain an even consistency once this is done.

6) In order to maximize the yield of your recipe, use a spatula or wooden spoon to scrape the excess pesto from around the edges of the processor’s container into the center.

7) Now, run the food processor on a low speed and begin gradually pouring the olive oil in. To minimize oil separation and ensure consistency, this process should be completed slowly over a period of roughly one minute.

8) Scrape the remaining pesto from the sides of the container and you’re ready to serve!

This dish will need to be refrigerated in a sealed container if not used entirely in its first serving. The salt and pepper are optional ingredients and can be added to taste as seen fit by the chef.
