Shish kebabs are a popular Mediterranean dish and a great street food. These skewered treats are also known as souvlaki and are fun to make at home as well. Marinate some chunks of pork loin or rib in lemon juice, zest, oregano, olive oil, salt and pepper for a few hours. When the shish kebabs are ready to prepare, simply grill the skewers on both sides. The shish kebabs can be served on the skewer or removed and plated over a bed of rice. You can make vegetable skewers to add some color to the dish, or serve with sautéed vegetables. Souvlaki Shish Kebabs – Small Skewers of Pork

Yield: 6 servings

Ingredients:
metal Skewers, 8-inches long or wooden skewers (need to be soaked in water)
2 pounds boneless center cut loin, 1 1/2-inch cubes
1/2 cup lemon juice
2 tablespoons lemon zest
2 tablespoons fresh oregano, chopped
2 tablespoons garlic, chopped
3 tablespoons olive oil
Salt, to taste
Freshly ground black pepper, to taste
Rice Pilaf for presentation

Directions:
Soak skewers in water for at least 1 hour. In a bowl, toss together pork, lemon juice, red wine vinegar, oregano, thyme, garlic, olive oil, salt and pepper. Cover and refrigerate for 3 hours or overnight. On the 8-inch skewers place 5 pieces of meat. Lay on a hot grill and grill slowly (no flame) continuing to brush on marinade, until meat is done. Serve immediately in a pita, topped with shredded salad.
