How To Make A Basic Red Sauce

A basic red sauce is an essential building block in cooking. A great red sauce can be made ahead of time and canned for use throughout the year. If you enjoy adding a great marinara to your pasta or favorite parmigiana recipe, then you will love having this red sauce on hand. You can make the sauce ahead along with a recipe and serve it freshly or freeze the sauce and store it for up to a month to toss in a sauce pan for a last-minute pasta dinner. Red sauce is easy to make and with the end of summer coming near, there are an abundance of tomatoes to use. If you want to use fresh tomatoes instead of canned, buy in bulk from a farmers market. Combine all the ingredients in a saucepan and allow the flavors to combine while the sauce simmers. Red Sauce Recipe
Yield: 1 quart

Ingredients:
16 ounces Tomatoes
3 ounces Tomato paste
4 ounces Onions, small dice
4 ounces Stock, chicken
1 ounce Olive oil
1 teaspoon Garlic, crushed
1 tablespoon Cilantro, chopped fine
½ teaspoon Lemon juice
1/8 cup Green bell pepper, small dice
½ pepper Jalapeno, minced
1 teaspoon Taco seasoning
1/8 cup Sugar
½ teaspoon Kosher salt
1/8 teaspoon Black pepper

Direction
1. Heat 2 quart sauce pan and add oil. Once hot sweat the onions, garlic, bell pepper, jalapeno, cumin, chili powder, and smoked paprika for 3-5 minutes
2. Add tomatoes, tomato paste and sauté for 5 minutes
3. Place sauce into a food processor and blend smooth
4.Put sauce back in sauce pan and bring to simmer. Add lemon juice, sugar, kosher salt and pepper and continue to simmer for 15-20 minutes
