This Greek and Turkish cucumber yogurt sauce is a common condiment for gyros, kebabs, or simply served as a dip. If serving as a dip, provide chopped vegetables, pita bread and olives for guests to enjoy with a true Mediterranean feel. This creamy dip is made by combining yogurt, cucumber, olive oil, garlic, salt and lemon juice. Cooks can choose to use dill, mint or parsley in the dip to add a complexity of flavors, but dill is the most common choice. The ingredients are combined in a blender or food processor until smooth. Allow the sauce to chill in the refrigerator to combine all the flavors before serving. In this video, Chef Mark will show you how to cook a cool and creamy tzatziki sauce. Tzatziki Sauce Recipe:

Total Time: 19 min
Prep 15 min
Yield: 2 1/2 cups

Ingredients:
1 pound (1 pint) plain yogurt (whole milk or low fat)
1 hothouse cucumber, unpeeled and seeded, small diced
1 tablespoon plus 1/2 teaspoon kosher salt
2 tablespoons freshly squeezed lemon juice (1 lemon)
1 1/2 teaspoons minced garlic
1 1/2 teaspoons minced fresh dill
1 tsp minced fresh mint
Pinch sea salt
Pinch of pepper

Directions:
1. The cucumber is salted and the excess water was drained and squeezed out
2. Place the yogurt in a bowl and blend the small diced cucumber with it
3. Mix in the lemon juice, garlic, dill, sea salt and pepper. Serve chilled or at room temperature
