Tomato Vodka Cream Sauce:
Makes 1 quart

Ingredients:
2 tablespoons olive oil
½ yellow onion, chopped
½ teaspoon red pepper flakes
3 cloves garlic, chopped
28 ounces diced tomatoes
½ cup vodka
½ teaspoon salt
1 teaspoon sugar
½ cup heavy cream
¼ cup fresh basil, chopped and divided
Shaved Parmesan for garnish

Method:
In a sauce pan over medium-high heat, sauté the onions in the olive oil about 3 minutes. Add the garlic and red pepper flakes and sauté one more minute
Add the tomatoes, salt, sugar and vodka, and bring to a simmer. Simmer 8-10 minutes to cook out most of the raw alcohol. Puree slightly with an immersion blender
Add the heavy cream and heat through. Season with salt and pepper, remove from heat and add fresh basil. Serve over pasta with shaved Parmesan and remaining basil
