Easy Rice Recipe:Ingredients
2 oz. butter for cooking rice
1½ ounces onion or shallot, fine dice (¼-onion)
1 cup long grain rice
1 pint chicken stock or water, boiling
Sea Salt, to taste
2 tablespoon butter
Add your favorite cooked vegetable diced as garnish

Procedure
1. Heat 1 oz. butter in a heavy saucepan. Add the onion and saute until it begins to soften. Do not brown.
2. Add the rice, without washing. Stir over heat until the rice is completely coated with butter.
3. Pour in the boiling liquid. Return the liquid to a boil with the rice. Taste and adjust seasonings, and cover tightly.
4. Place in a 350°F oven and bake for 20-24 minutes, until liquid is absorbed and rice is dry and fluffy. Check the liquid at 15 minutes and add if necessary. Taste the rice, and if it is not done, replace in oven 3-5 minutes.
5. Fluff the rice (this releases steam and prevents further cooking) and enrich with 2 tablespoons of butter.
