Around the holidays, you want to wake up slowly and enjoy your mornings. Shirred eggs and bacon allow you to have a great breakfast with little effort.  Place cooked bacon, caramelized onions and sautéed spinach in the bottom of a pie dish. Crack four whole eggs on top of the spinach in the pie dish and spoon heavy cream over each egg. Sprinkle some cheese over the mixture and then place the mixture in the oven. Bake until the egg white is cooked, but you will want to leave the yolks runny. Shirred Eggs and Bacon Recipe:

Ingredients:
1Tbsp butter
1Tbsp oil
4oz diced Vidalia or sweet onions
6oz of Spinach
6 pieces of cooked bacon
4 whole eggs
4oz heavy cream
6oz cheese

Directions:
1. Cook onions in butter and oil, wilt spinach.
2. Place bacon in baking dish and pour onion and spinach mix over. Crack the eggs onto the spinach, spoon heavy cream over egg yolks drizzle with cheese.
3. Place in oven at 375 for 12-15 minutes. Egg yolks should be soft when done.
