Buttermilk Biscuits Recipe

Ingredients
4 1/2 oz. cake flour
4 oz. bread flour
2 1/4 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon sugar
1/2 buttermilk
1/2 cup heavy cream
1 egg
2 1/2 oz. butter

Procedure
The cream,buttermilk,egg and butter need to be cold for this recipe.
Mix the cream, buttermilk, and egg together and set aside. Mix the dry ingredients in a bowl and cut in the butter with a pastry cutter or using your fingers, until you have small lumps of butter that are coated with the flour mixture. Pour in the egg mixture and gently mix by hand until incorporated. Gently form a ball and roll about 3/4 to 1 inch thick. Cut with a 2″ round cutter and place on a baking sheet lined with parchment paper. Bake at 450 degrees for about 15 minutes until the biscuits start to turn golden brown.The remainder makes about 14 biscuits if the dough from the cut outs can be gently reworked into a ball and re-rolled.
