It is the time of the season where pumpkins have their time in the spotlight. The orange squash is used to create ghoulish jack-o-lanterns, the seeds are roasted for a tasty snack and the flesh is used in a number of dishes from the time-honored pumpkin pie to savory soups. Pumpkin bread is not as common as a few of the other fall dishes, but once you try it you will be craving it all year long. Combine pumpkin, sugar, vanilla and oil before adding in the eggs and flour. This simple recipe can be baked in a themed pan to give a little bit of personality to your bread. Pumpkin Bread Recipe:

Ingredients:
2 cups pumpkin puree
2 cups granulated sugar
1 cup oil
3 eggs
3 cups all- purpose flour
1 teaspoon baking soda
1 tablespoon cinnamon

Directions:
1. Sift the all-purpose flour, cinnamon and baking soda
2. In a bowl mix the pumpkin and sugar together and add the oil and then the eggs. Mix in the dry ingredients and spoon batter into a greased loaf pan, filling about 3/4 of the way
3. Bake at 350 degrees for about 30 minutes, or until the top springs back when touched or a tooth pick inserted comes out clean
4. Cool for about 20 minutes and dust with powdered sugar and decorated with Halloween candy
