Mouthwatering Chocolate Zucchini Bread
With summer in full swing, grocery stores, farmers markets and CSAs are all loaded up with zucchini, one of the most healthy and delicious vegetables of the season. However, unlike other vegetables and fruits, it can be difficult to find recipes that contain zucchini for your cooking courses, even though they grow like weeds in the hot heat.
However, because of their mild flavor and thick texture, there are a variety of ways to utilize this veggie into your online culinary programs. If you have an abundance of summer squash – whether it’s yellow or zucchini – there are many unique methods to prepare it. Here are one deliciously sweet way use up all that zucchini:
Chocolate Zucchini Cake

What you’ll need:
⅓ cup vegetable oil
2 ½ cups all-purpose flour, plus 1 tablespoon
2 large eggs
2 large egg whites
1 teaspoon vanilla extract
½ cup fat-free cream cheese, softened
½ cup packed brown sugar
½ cup unsweetened cocoa
¾ cup granulated sugar
½ teaspoon cinnamon
½ teaspoon salt
½ teaspoon baking soda
2 teaspoons baking powder
2 cups shredded zucchini
¾ cup fat-free buttermilk
¼ cup walnuts
⅔ cup semisweet chocolate chips
What to do:
Use cooking spray to coat a 12-cup Bundt pan, dust the pan with 1 tablespoon of flour and preheat the oven to 350 degrees Fahrenheit. Grab a large bowl and mix the cream cheese, sugars and oil until all of the items are thoroughly mixed. Then, add your eggs and egg whites one at a time. After that, beat in your vanilla extract.
Mix all of the dry ingredients in medium bowl with a whisk until well blended, then add the flour mixture and buttermilk alternately, working in batches, beginning and ending with the flour mixture. After that, fold in the zucchini, nuts and chocolate chips. Grab your prepared pan, pour in the mixture and bake for one hour. Cool on a pan for 10 minutes on a wire rack after removing from oven and then remove the cake and let it completely cool.
This cake is delightful on its own or can be served with vanilla ice cream, powdered sugar or even sour cream frosting. There you go – a delicious way to use veggies and enjoy a delectable dessert at the same time.
