Baked Lemon Chicken Breasts Recipe
Yield: 2 servings

Ingredients
2 (6-8 ounces) chicken breast, boneless and skin on
¼ cup olive oil
1 tablespoon onion
1/2 tablespoon garlic, minced
1 ounce white wine (dry)
1 each lemon
½ tablespoon (approx. 1 lemon) lemon zest
1 tablespoon (approx.1 lemon) lemon juice
½ teaspoon Italian blend
¼ teaspoon kosher salt
1/8 teaspoon black pepper

Procedure
1. Rinse chicken breast and trim any excess fat. Using a paper towel pat dry the chicken breast.
2. Preheat oven to 400 degrees F.
3. Using a sauce pan sweat (low heat) onions and garlic for 3-5 minutes.
4. Add the white wine, lemon juice, lemon zest, kosher salt, black pepper and the Italian blend. Remove from heat, place in bowl and reserve.
5. Dip the chicken breast into the ingredients that are in the bowl, and then place chicken breast skin side up into a 9 X 12 inch baking pan.
6. Generously brush the remaining ingredients in the bowl over the chicken breast.
7. Cut whole lemon into 6 wedges and place under the chicken breast.
8. Place baking pan in the pre-heated oven and bake for 30-40 minutes. Half way through the baking process brush the chicken breast with the pan drippings. The chicken is done when the juices run clear (internal temperature should be 185*F). The skin should be lightly brown.
9. Remove chicken breast and place on a warm plate, drizzle pan dripping over the chicken breast.
10. Garnish with lemon wedges.

This recipe serves well with your favorite pasta dish.
