Roasted Chicken Recipe:

Ingredients
2 oz. sweet butter
Sea Salt
Twine for tying the Chicken
1 tsp.Freshly Ground Black pepper

Procedure
1. Wash and pat dry the chicken well. Allow it to sit at room temp for about an hour.
2. Set oven at 450oF to preheat.
3. Salt and pepper the inside of the cavity, also salt inside the neck.
4. Truss the chicken as demonstrated starting with the legs first then pulling twine around the carcass under the breast to be secured and tied under or at the neck.
5. With softened room temperature butter coat well the chicken skin in all areas liberally.
6. Place chicken in roasting pan or on rack to roast for 20 minutes.
7. After 15- 20 minutes turn temperature down to 375 to roast until internal temperate of leg is at least 165oF.
8. When cooked to proper temp, allow to rest 15 minutes before carving.
