How To Bake A Ham

Baked Ham Recipe:

A 9lb. Picnic Shoulder Ham
Pineapple Chunks
Whole Maraschino Cherries
Brown Sugar

1. With paring or Boning knife as demonstrated loosen meat around arm bone and shoulder bone. Cut of a flat section of the shoulder end of the ham.
2. Soak overnight in water keep refrigerated
3. Next day bring ham to room temp ( as ham is already cured and smoked)
4. Score Ham as demonstrated with a criss-cross fashion on the fat.
5. Place oven in a preheated 250oF regular oven or 225oF convection oven and heat on roasting pan with rack( if avail) until internal temp is at least 145oF for food safety purposes. This process may take 3 hours. Check internal temp after two hours and it would depend on the size of the picnic ham.
6. After ham has sat for 5 -6 minutes. Affix with toothpicks the pineapple chunks and maraschino cherries.
7. Sprinkle with brown sugar and place back in oven just to melt the sugar
8. Place on carving board and re-cut a flat section of the ham so that is can sit upright.
9. Carve as demonstrated starting from the Arm bone side, horizontally and down to the larger sections/slices of meat.
