Brown Lentils Recipe

Ingredients
1 cup of brown lentils
3 cups of water or vegetable or chicken stock
Fresh diced ripe tomatoes
Manchego cheese, cut into bite size pieces
Sea Salt
Freshly ground pepper
Garam Masala (optional) ½ tsp.

Procedure
1. Spread out lentils and pick through for any debris
2. Rinse in colander or strainer to wash thoroughly.
3. Boil salted water ( or stock) add lentils, cover bring to boil and then reduce to simmer should take about 25 minutes towards the end add the garam.
4. Adjust seasoning
5. Serve in warmed dish add cheese and tomatoes
6. Drizzle Balsamic and or EV olive oil over all.

Red Lentils Recipe

Ingredients
1 cup of red lentils
2 cups of water or vegetable or chicken stock
2 cloves garlic, sliced thin
1 oz of butter or ghee
Small diced red, yellow and orange peppers.
Sea Salt
Freshly ground pepper
¼ tsp Cayenne pepper

Procedure
1. Spread out lentils and pick through for any debris
2. Rinse in colander or strainer to wash thoroughly.
3. Boil salted water (or stock) add lentils, cover bring to boil and then reduce to a slow simmer should take about 20 minutes
4. Red lentils cook faster than the common brown lentils
5. Heat skillet, add oil and slowly cook garlic slowly till tender, then add diced sweet peppers, toss until soft.
6. Taste and adjust seasoning
7. Add cayenne pepper
