Roast Prime Rib Recipe:

Ingredients
4-5 lb. Standing Rib Roast. USDA Choice
Sea Salt
Twine
Fresh Rosemary, finely chopped
Dry mustard
Roasting pan with rack

Procedure
1. Set pre-heated oven to 325oF
2. Trim any desired excess fat and truss the roast as demonstrated.
3. Score the fat cap in criss cross fashion.
4. Make a mixture of sea salt, finely chopped fresh rosemary and ground mustard with a little water to make a paste.
5. Press paste into fat areas of roast.
6. Place roast on rack or roast on its end with fat facing up. Place into oven after 15 minutes lower to 275oF.
7. Roast until internal temperature is 125oF Check after 1hour for internal temp reading. Roast may take 1hr 25 minutes.
8. Allow to rest for 25-minutes before carving.
9. Serve with freshly ground black pepper at the table, and sea salt.
10. Can yield enough for 4-5 people depending on portion size served.
