Egg Fried Rice Recipe

Ingredients
Cooked long grain rice from 1 cup of raw rice
2 cloves garlic, thinly sliced
1-2 scallions, thinly sliced
1-2 whole eggs
1 tsp chopped ginger
3 Tbsp corn oil
2 tbsp soy sauce, or as much as desired to achieve brown color
Hot mustard to taste as condiment
Cilantro sprigs

Procedure
1. Cool cooked rice, heat wok or skillet add oil, heat until oil starts to swirl in pan
2. Add rice, cook on high heat, add garlic, ginger, cook a few moments then add eggs, scramble and incorporate into rice
3. Add scallions and soy sauce to achieve brown color.
4. Serve with springs of cilantro

  1. This is delicious! My son said I couldn’t cook Japanese Fried Rice the way restaurant did! Ha! Fooled him. I think this is even better! It was so easy too. I didn’t have any corn oil, so I substituted peanut oil. I also added a few crushed red pepper flakes beccause I had no ginger. Tasted divine! I can hardly wait to try another recipe!
