How To Make A Flavorful Italian Dressing

This emulsified dressing, is a staple in every kitchen. An emulsified dressing is a mixture of two liquids that would not ordinarily mix together, but with a little extra elbow grease while mixing the oil and vinegar will combine and the spices will remain suspended in the dressing. For an authentically Italian dressing use Italian white wine vinegar and Italian extra-virgin olive oil as the base. Add lemon juice along with a large variety of spices and dried herbs like parsley, basil, oregano and thyme into the dressing. To emulsify the dressing, you can vigorously whisk the ingredients or use a food processor to do the work for you. Shaking the ingredients together in a carafe is also an option. This dressing is perfect for a salad or as a marinade for meats. Italian Dressing Recipe

Ingredients:
1 cup high quality white wine vinegar
4 oz. water
Bottle with lid best for shaking or blender
2 tsp. sugar
1 tsp. lemon juice
1 tsp. garlic salt
1 tsp. onion salt
1 tsp. ground black pepper
1 tsp. dried parsley flakes
1/2 tsp. dried basil
1/2 tsp. dried oregano
1/4 tsp. dried thyme
2-1/2 cups EV olive oil

Method:
1. Combine vinegar and water in a bottle or blender
2. Add 2 tsp. white sugar, 1 tsp. lemon juice, 1 tsp. garlic salt, 1 tsp. onion salt and 1 tsp. of ground black pepper
3. Close the bottle and shake it until the salts dissolve. Or pulse in blender/food processor
4. Add 1 tsp. of dried parsley flakes, 1/2 tsp. dried basil, 1/2 tsp. dried oregano and 1/4 tsp. of dried thyme
5. Stream in olive oil in blender on low speed, or shake it to blend it well. Cover the bottle and store the mixture in the refrigerator
