Seared Diver Scallops Recipe

Ingredients:
6 scallops, 1 oz. each
Salt and white pepper – to taste
1 fluid oz clarified butter
2- oz.Black and white sesame seeds – toasted

Method:
1. Brush Butter on both sides of scallops.
2. Season the scallops with salt and white pepper.
3. Dredge both sides of scallops with sesame seeds
4. Heat the clarified butter in a sauté pan until very hot. Sear the scallops until golden brown, approximately 2 minutes on each side.
5. Remove the scallops when they are done and drain on paper towels.
6. Serve on bed of baby arugula lettuce.
