Sure, you could buy cream of mushroom soup in a can, but you would lose the fresh flavors and decadence that comes with a homemade version. This rich soup is earthy and filling – and easy to make. Although a good cream of mushroom soup is delicious on its own, it is often used as an ingredient in other recipes. Many casseroles use cream of mushroom soup as a binding element, and other dishes use the thick soup as a flavorful base for sauces and gravies. Cream of mushroom soup is a versatile staple that is important for any home cook to know how to make. Try adding a variety of mushrooms like shitake, portabella and cremini for depth. Cream of Mushroom Soup Recipe

Ingredients:
3 oz butter
3 oz onion, brunoise
24 oz mushroom, brunoise
½ tsp garlic, crushed
2 oz flour
2 qt white stock – mushroom or chicken
4 oz milk
To taste kosher salt
To taste ground white pepper
2 oz heavy cream
2 oz mushrooms, brunoise, sautéed in butter

Procedure

1 .Review cream soup guidelines for Method 2.
2. Heat the butter in a heavy saucepot over moderate heat.
3. Add the onions, mushrooms and garlic. Sweat the vegetables without letting them brown.
4. Add the flour and stir to make a roux. Add enough flour to absorb excess fat. Cook the roux for 8 minutes, but do not let it start to brown.
5. Gradually add the stock. Bring to a boil, reduce to a simmer and lightly whisk the soup. Be careful not to discolor the soup by whisking too hard against the sauce pan. A suggestion would be to use a heat-resistant spatula.
6. Simmer vegetables until they are very tender.
7. Skim the soup carefully
8. Optional Step – process the soup
9. Temper the milk and add to the soup.
10. Continue to simmer and slowly add tempered cream.
11. Season to taste
12. At service time, soup can be garnished with sliced mushrooms that were sautéed in butter.

Option: If the mushroom flavor of the soup is weak, sauté more mushrooms and add to the soup to enhance the flavor. Mushroom paste can also be added to enhance the flavor.
