How To Grill Tasty Artichokes

These vegetables are in the thistle family and they may not look very edible, but they certainly are and they are absolutely delicious. Artichoke leaves can be peeled off to remove the meat, with the heart of the artichoke providing the most meat. Steam or boil artichokes whole before you halve them; then put them on the grill. If you have a grill basket this will make the process easier and you won’t have to worry about any getting stuck between the grates. The grill will give them some additional flavor and the perfect amount of browning. Add some seasoning to your artichokes with pepper, olive oil, lemon and salt. Grilled Artichokes Recipe

Ingredients:
1 dz small artichokes or large ones cut into quarters, after cooking them in salted water
1 Tbsp chili EV olive oil (for drizzling)
1/4 tsp ground black pepper
1/4 tsb sea salt
5 basil leaves cut into thin strips

Method:
1. Trim stem end of artichoke off as needed and with scissors snip off the pinchy spines
2. Bring about 1 qt of water to a boil with ¼ tsp of salt and simmer chokes until pierced with a fork near the stem end. Don’t overcook
3. Remove and drain
4. Prepare a hot grill and be sure to brush grill with oil
5. Lay chokes onto a grill plate or directly onto the grill bars and cook on med-high heat
6. You will want to have a grilled brown color to them. Grill them for about 3 minutes each side
7. Remove and add oil and herbs
