 Beans are a great source of fiber and protein and are often a used as a substitute for meat because of their nutritional value and ability to satisfy a strong appetite. If you are using dry beans, be sure to soak the beans for at least an hour, or overnight. Then cook the beans until they are tender. Once the beans are ready, you can begin to sauté chopped green pepper and onion in olive oil, adding in some cumin, oregano, bay leaves and minced garlic for a robust flavor. Black Bean Recipe:

Ingredients:
2 cups Black beans (cooked tender)
1 Tbsp Cumin
1 Tbsp oregano
1 or 2 Bay leaves
1 Tbsp minced Garlic
1 cup of wine
Shot of vinegar
½ cup chopped tomatoes or chilies

Directions:
1. Soak the Black Beans in water for an hour than cook them until tender.
2. Saute green peppers and onions in olive oil.
3. Add cumin, oregano, bay leave and minced garlic.
4. Add the black beans cooked previously to a tender state.
5. Add wine and vinegar and adjust seasoning with salt.
6. Remove the bay leave before service.
7. Add lastly chopped tomatoes or chili etc.
8. Garnish with shredded cheese
