How To Cook Green Beans

Learn to cook green beans and mushrooms with Chef Mark.

Green Bean and Mushrooms Recipe:

1 Tablespoon XVO olive oil
8 ounces sliced button or crimini mushrooms
2 cloves garlic, minced
2 teaspoons chopped fresh thyme
Sea salt and freshly ground black pepper
1/3 cup white wine
1/3 cup chicken stock
1 lb fresh green beans
1/4 cup grated Parmesan cheese

1. Bring 2 quarts of water to a boil, adding 1 tbsp salt. Add trimmed green beans, and cook until al dente, firm to the bite. Drain and cool beans in cold water, remove when cooled.
2. Heat olive oil in a large skillet over medium heat. Add mushrooms and cook until browned, about 3 to 4 minutes. Add garlic and thyme and cook until garlic is soft. Season with sea salt and freshly ground black pepper to taste.
3. Add wine and chicken stock to the skillet and bring to a boil. Simmer to reduce sauce, about 2 to 3 minutes.
4. Add cooked green beans to mushroom sauce and toss to coat. Top with Parmesan cheese.
