Casserole dishes are always a reliable standby. Simply gather the ingredients you have on hand, layer them in a casserole dish, and bake. Because casserole recipes are so flexible, you can add and subtract ingredients as you see fit. Many home cooks enjoy making their own casserole recipes or putting their own spin on an old favorite. When you’re chopping up your ingredients, aim to make them the same size to ensure that they all cook evenly throughout the dish. Chicken casseroles are an entire meal in one dish and are great served with a simple salad. You can easily freeze the leftovers and reheat them in the oven for a quick dinner. Chicken Casserole Recipe

Ingredients:
1/2 cup celery, chopped
1/4 cup onion, chopped
2 Tbsp green pepper, chopped
2 Tbsp butter
2 cups chicken breasts
4-1/2 ounces mushrooms, sliced
1 can cream of mushroom soup
1 cup milk
salt to taste
black pepper to taste
2 ounces cheddar cheese, shredded

Directions:
1. In a large skillet, saute the celery, onion and green pepper in butter
2. Remove from the heat and stir in the chicken, mushrooms, soup, and milk
3. Transfer to a 2-qt. baking dish. Cover and bake at 325° for 25 minutes
4. Remove from oven, sprinkle with cheddar cheese and cook for another 5 minutes or until
