In the warmth of summer, we crave refreshing dishes. A cool cucumber salad is perfect for a midday snack or cookout side dish. Cucumbers have high water content, so not only do they taste refreshing on a summer day, they are actually refueling you. For a more colorful and nutritious salad, leave on the skin of at least half of the cucumber slices. There are many variations of cucumber salads, leaving room for interpretation with whatever recipe you choose to follow. Experiment with dressings and vegetable variations to keep the dish fresh. Cucumber Salad Recipe

Ingredients:
4 medium cucumbers, seedless if desired
1 tbsp sea salt
1 oz of minced onion
¼ cup of chopped fresh dill
3-4 oz of sour cream
¼ tsp black pepper
Juice of one lemon

Method
1. Trim off ends of cucumbers and peel alternate stripes on them ( or peel completely)
2. Slice thin and toss in bowl with salt allow to cure for 10 -12 minutes.
3. Rinse off salt thoroughly, allow to drain.
4. Add onion, dill and black pepper, then add lemon juice ( more can be added if desired)
5. Add sour cream and adjust creaminess as desired
