Red Snapper Cantonese Style Recipe

Ingredients:
2-3 red snapper fillets
1-3 Tbsp soybean or corn oil
1 tsp soy sauce
1 Tbsp minced garlic
1 Tbsp.minced Ginger
1 oz Shao Xing rice cooking wine (optional)
4-6 oz. Chinese sweet and sour sauce, jar

Method:
1. Wash fish and dry well. Heat 1 -2 tbsp oil in wok or skillet and brown fish on all sides when oil is hot
2. Remove and pat dry with paper towel.
3. After cleaning out wok, add more oil and cook scallions, garlic and ginger. Lightly add some wine and then add the sauce, and simmer gently
4. Add the browned fish and heat throughout and serve immediately
