Baked Catfish Recipe

Ingredients:

8 oz portion of catfish steak
1 tsp. sea salt
¼ tsp. freshly ground black pepper
1 tbsp minced shallots
½ of a lemon, juiced
1 tsp. olive oil
3 each garlic cloves sliced
¼ of a tomato diced
2 each sun-dried tomato thin sliced
4 each calamata olives, sliced
2 each green olives, sliced
1 oz. white wine

Method:
Preheat oven to 425 degrees F.
1. Oil bottom of casserole dish and place all ingredients on fish in order of listing.
2. Pour wine over fish.
3. Cover with foil and Bake in oven for 15-20 minutes.
4. Remove foil and serve

  1. Do you suggest leaving the skin on (after cooking) before serving to guests?

    • Similar to any cross cut steak, the skin can either be left on or be removed prior to serving the guest. In commercial dining establishments the skin would be removed,which is very easy to do.Cheers Chef Mark
