Mashed Potatoes Recipe:

Ingredients:
4 lbs russet or Yukon gold potatoes, do not cut or peel
½ cup (1 stick) salted butter
2 cups buttermilk
Salt & white pepper
1/4 cup milk

Method:
1. In a pot, cover potatoes with cold, salted water. Bring to a boil, reduce heat; cook 20 minutes or until tender; drain.
2. With a fork and paring knife peel potatoes while still hot but cool enough to handle. Or rub in dish towel to remove skin when slightly cooler.
3. Warm butter, buttermilk and 1 tsp each salt and pepper in a small pot. Add potatoes and mash until smooth. Can be put into mixer and mixed a few minutes with the paddle for whipped potatoes. Have some hot milk handy should you wish to adjust the potatoes some more.
