Chocolate Chip Scones Recipe:
Yields 8 scones
Ingredients:
2 cups all-purpose flour
1/3 cup granulated sugar
1½ teaspoon baking powder
1/8 teaspoon salt
1/3 cup unsalted butter, chilled and cut into small pieces
½ cup chocolate chips
1 large egg, lightly beaten
1 teaspoon vanilla extract
5 ounces cold heavy cream
For the Topping:
1 egg, lightly beaten
1 Tbs. heavy cream or milk
Sprinkle of sugar, optional
Method:
1. Preheat oven to 375°F. Line a baking sheet with parchment paper.
2. In a large bowl, whisk together the flour, sugar, baking powder and salt.
3. Using your hands or a pastry blender incorporate the butter pieces into the flour until the butter pieces are a little smaller than peas.
4. Stir in the chocolate chips.
5. In a small bowl, whisk together the cream, egg and vanilla.
6. Pour the liquid mixture into the dry mixture and stir until just combined.
7. Turn dough out onto a lightly floured surface. Knead the dough once or twice, just to bring it together.
8. Shape the dough into an 8-inch circle with a thickness of about 1 inch. Place on prepared baking sheet and cut into 8 wedges (like a pie).
9. Mix the topping ingredients together and brush the tops of each scone. Sprinkle with additional sugar, if desired.
10. Bake for 15-20 minutes, or until lightly browned. Remove from oven, let cool and enjoy!
