Ingredients:
1 pound Roma or plum tomatoes, halved lengthwise
Olive oil
Coarse salt and freshly ground black pepper

Method:
1. Preheat the oven to 300°F
2. Line a rimmed baking sheet with foil. Drizzle generously with olive oil
3. Place the tomatoes on the baking skin side down. Sprinkle with the salt and pepper
4. Roast for 2 hours
5. Let tomatoes cool to room temperature and serve immediately, or refrigerate in an airtight container
