Chicken salad is a wonderful dish for summer and very versatile. Try tossing it on some sandwich bread for a quick, to-go lunch. Since the chicken salad is the bulk of this sandwich, it can be made anyway you crave. Add chopped grapes, dill and cucumber for a sweet, summery variation or keep it savory with celery, fresh herbs and chives. Layer the chicken salad between two slices of bread, a bed of lettuce and maybe some avocado and tomato. Use leftover chicken breast to make chicken salad and have it on hand for days during the rest of the week when you are crunched for time. Chicken salad goes great in wraps and on its own over a bed of lettuce. Chicken Salad Sandwich

Ingredients:
4 ounces chicken breast, cooked
2 ounces mayonnaise
2 ounces grapes, cut in halve
2 Tbsp almonds, toasted
To taste salt
To taste black pepper, ground
2 slices bread

Directions:
1. Shred the chicken meat and place in a mixing bowl
2. Add mayonnaise, grapes, and almonds
3. Stir until thoroughly combined. Season with salt and pepper to taste
4. Spoon onto the bread and cut the sandwich as desired
